Instructions
- Preheat the oven to 350°F (175°C) and prepare the muffin tin by greasing or lining it with paper liners.
- In a large mixing bowl, combine flour, sugar, baking powder, baking soda, and salt. Stir well.
- In another bowl, whisk together peanut butter, milk, vegetable oil, egg, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix. Optionally, fold in chocolate chips.
- Fill each muffin cup about 2/3 full with batter.
- Bake for 15-18 minutes or until a toothpick comes out clean. Allow cooling in the pan for 5 minutes, then transfer to a wire rack.
