  • 3/4 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1 teaspoon espresso powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 5 tablespoons unsalted butter, softened to room temperature
  • 3/4 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract

Instructions

  1. Make the Peanut Butter Filling: In a small bowl, mix peanut butter and confectioners’ sugar until smooth. Roll into small balls and freeze for at least one hour.
  2. Make the Brownie Cookie Dough: Melt semi-sweet chocolate and let cool. Whisk together flour, cocoa powder, espresso powder, baking powder, and salt in a bowl. In another bowl, cream butter and sugars until smooth, then mix in eggs and vanilla. Stir in melted chocolate, then add dry ingredients until combined. Chill dough in the fridge for 1 hour.
  3. Prepare for Baking: Preheat oven to 350°F (175°C) and line baking sheets with parchment paper. Roll cookie dough into balls, make an indentation, and place a frozen peanut butter ball inside. Seal the dough around the filling.
  4. Bake the Cookies: Place on prepared sheets and bake for 12-13 minutes. Let cool on sheets for 10 minutes before transferring to a wire rack.
