Description

  • 1/4 cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 6 tablespoons unsalted butter, softened
  • 1 cup confectioners sugar
  • 1 teaspoon pure vanilla extract
  • 1/8 teaspoon salt
  • 1 and 1/4 cups creamy peanut butter
  • 6 ounces semi-sweet, bittersweet, or milk chocolate
  • 3 tablespoons creamy peanut butter

Instructions

  1. Preheat the oven to 350°F (175°C). Mix graham cracker crumbs, melted butter, and granulated sugar until combined.
  2. Press the mixture into a 9-inch tart pan, pressing firmly into the base and up the sides.
  3. Bake for 13–15 minutes until the edges are lightly browned. Remove and let cool for 15 minutes.
  4. In a mixing bowl, beat the softened butter until smooth. Add confectioners sugar, vanilla, and salt, and beat until just combined.
  5. Add 1 and 1/4 cups peanut butter and mix on low speed until smooth and fully incorporated.
  6. Spread the peanut butter filling evenly over the cooled crust.
  7. Melt the chocolate and remaining 3 tablespoons peanut butter in a saucepan or microwave until smooth.
  8. Pour the chocolate mixture over the peanut butter layer and smooth with a spatula.
  9. Refrigerate uncovered for 4 to 6 hours until set.
  10. Slice and serve chilled. Optionally garnish with crushed peanuts or sea salt.

  • Do not overbake the crust; it should be just lightly browned.
  • Soften butter to room temperature for smoother filling.
