  • 1 large egg
  • 1 large egg yolk
  • 1 teaspoon pure vanilla extract
  • 1/2 cup honey roasted peanuts, roughly chopped

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper. Spray lightly with cooking spray.
  2. In a medium bowl, whisk together flour, baking powder, and kosher salt. Set aside.
  3. In a large bowl, whisk melted butter, brown sugar, honey, and peanut butter until smooth and combined.
  4. Add egg, egg yolk, and vanilla extract to the wet mixture and whisk until fully incorporated.
  5. Gradually stir the dry ingredients into the wet ingredients until just combined—do not overmix.
  6. Pour the batter into the prepared pan and spread evenly. Sprinkle chopped honey roasted peanuts on top.
  7. Bake for 25 to 30 minutes, or until the edges begin to pull away from the pan and a toothpick inserted in the center comes out clean.
  8. Let the blondies cool completely in the pan. Use the parchment paper overhang to lift out and slice into squares.
