Description
Peanut Butter Banana Muffins are a delicious, creamy blend of peanut butter and bananas. Perfect for breakfast, snacks, or dessert.
Ingredients
Scale
- 3 ripe bananas (mashed)
- 1 cup peanut butter (smooth or crunchy)
- 1/2 cup honey or maple syrup
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups whole wheat flour
- Optional: 1/2 cup chocolate chips, chopped nuts, or dried fruits
Instructions
- Preheat your oven to 350°F (175°C) and prepare your muffin pan by greasing or lining with muffin cups.
- In a large bowl, mash the bananas, then add peanut butter, honey or maple syrup, eggs, and vanilla extract. Mix until creamy.
- In a separate bowl, combine whole wheat flour, baking soda, and salt. Whisk together until well mixed.
- Gently fold the dry ingredients into the wet ingredients. Add chocolate chips, nuts, or dried fruits if desired.
- Spoon the batter into the muffin tin, filling each cup about two-thirds full. Optionally, place banana slices on top for decoration.
- Bake for 18-22 minutes or until a toothpick inserted comes out clean. Keep an eye on the muffins to prevent overbaking.
- Let the muffins cool in the pan for 5-10 minutes, then transfer to a wire rack to cool completely.
Notes
- Do not overmix the batter, as this leads to dense muffins.
- Use ripe bananas for the best flavor and sweetness.
- Ensure your flour is measured correctly to avoid dense muffins.
