Ingredients

  • 1 cup creamy peanut butter
  • 2 and 1/2 cups confectioners’ sugar
  • 1/2 teaspoon pure vanilla extract
  • 1/8 teaspoon salt
  • 12 ounces semi-sweet chocolate bars, coarsely chopped
  • 1 teaspoon vegetable oil (optional)
  • Sprinkles for topping (optional)

Instructions

  1. Prepare a baking sheet lined with parchment paper or a silicone mat.
  2. Beat softened butter with a mixer until creamy, about 2 minutes. Add peanut butter and mix for 1 minute.
  3. Gradually mix in confectioners’ sugar, vanilla extract, and salt on low speed for 2 minutes.
  4. Roll the mixture into 1-inch balls and place them on the baking sheet.
  5. Chill the peanut butter balls in the refrigerator for at least 1 hour.
  6. Melt chocolate and vegetable oil in a double boiler or microwave, stirring until smooth.
  7. Dip each chilled peanut butter ball into the melted chocolate and tap to remove excess.
  8. Sprinkle toppings on while chocolate is wet and place back on the baking sheet.
  9. Refrigerate for 30 minutes until chocolate sets.
  10. Serve and enjoy.
