Description

Peach and Raspberry Sundae is a refreshing summer dessert made with poached peaches, tangy raspberry sauce, and vanilla ice cream.


Ingredients

  • 4 firm ripe peaches
  • 2 cups granulated sugar
  • 1/2 cup confectioners sugar
  • 1 tsp fresh lemon juice
  • 3 cups fresh raspberries, divided
  • Vanilla ice cream for serving

Instructions

  1. Score an X on the bottom of each peach. In a saucepan, combine 4 cups of water and 2 cups of granulated sugar. Bring to a boil, stirring until sugar dissolves.
  2. Add peaches, reduce heat, and simmer for 6–10 minutes until tender. Remove with slotted spoon and cool slightly.
  3. In a blender, combine 1/2 cup confectioners sugar, 1 tsp lemon juice, and 2 cups raspberries. Blend until smooth, then strain through a fine mesh sieve. Discard seeds.
  4. Peel cooled peaches, remove pits, and slice each half into 4 wedges.
  5. To assemble, place peach slices in bowls, top with scoops of vanilla ice cream, drizzle with raspberry sauce, and garnish with remaining 1 cup raspberries.

  • Use ripe but firm peaches to prevent them from falling apart while simmering.
  • Straining raspberry sauce is key to a smooth texture.
  • Use thawed frozen raspberries if fresh ones are not available.
