Description
Peach pie cruffins are a delightful pastry that combines the softness of muffins with the flaky layers of croissants, filled with a sweet peach filling.
Ingredients
- All-purpose flour: 2 cups (250 g)
- Sugar: 1/2 cup (100 g), plus extra for sprinkling
- Butter: 1/2 cup (113 g), melted and slightly cooled
- Fresh peaches: 2 cups (about 3 medium peaches), peeled and diced
- Ground cinnamon: 1 teaspoon
- Ground nutmeg: 1/4 teaspoon
- Vanilla extract: 1 teaspoon
- Baking powder: 2 teaspoons
- Egg: 1 large
- Salt: 1/4 teaspoon
Instructions
- Prepare the dough by whisking together flour, baking powder, and salt in a bowl. In another bowl, mix melted butter, 1/4 cup sugar, and the egg. Combine wet and dry ingredients gently.
- Make the peach filling by mixing diced peaches with 1/4 cup sugar, cinnamon, nutmeg, and vanilla extract. Let it sit to meld flavors.
- Assemble the cruffins by rolling out the dough, spreading melted butter, sprinkling sugar, slicing into strips, adding peach filling, and rolling into spirals.
- Bake the cruffins in a preheated oven at 375°F (190°C) for 20-25 minutes until golden brown.
- Cool the cruffins for 5 minutes in the tin, then transfer to a wire rack. Dust with powdered sugar if desired before serving.
Notes
- Choose ripe, fresh peaches for the best flavor.
- Handle the dough gently to maintain flakiness.
- Can substitute with other fruits like blueberries or raspberries.
- For gluten-free, use a gluten-free flour blend with xanthan gum.
