Description

  • 1 cup peach jam
  • 2 small fresh peaches, peeled, pitted, and sliced

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, cardamom, salt, baking soda, and nutmeg.
  3. Cut in the softened butter until the mixture resembles coarse crumbs. Reserve 1 cup of this crumb mixture for the topping.
  4. To the remaining mixture, add yogurt, egg, vanilla extract, and almond extract. Mix until just combined.
  5. Press the batter into the bottom and 1 inch up the sides of the prepared pan.
  6. Spread peach jam evenly over the batter, then layer fresh peach slices on top.
  7. Sprinkle the reserved crumb mixture over the peaches.
  8. Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool for 20 minutes, then remove the sides of the springform pan and allow the cake to cool completely.
