- 200 grams digestive biscuits (or graham crackers)
- 100 grams unsalted butter, melted
- 400 grams cream cheese, softened
- 150 grams granulated sugar
- 200 ml sour cream
- 3 large eggs
- 1 teaspoon vanilla extract
- 100 ml passionfruit pulp (fresh or canned)
- 1 tablespoon cornflour (optional)
- Fresh passionfruit seeds (for garnish)
Instructions
- Preheat your oven to 180°C (350°F).
- Crush the digestive biscuits in a food processor until fine crumbs form.
- Mix the crumbs with melted butter and press into the bottom of a 9-inch springform pan.
- Bake the crust for about 10 minutes and let it cool.
- In a large mixing bowl, beat the softened cream cheese until smooth.
- Gradually add granulated sugar while mixing until combined.
- Add sour cream, eggs, and vanilla extract, mixing until just combined.
- Gently fold in the passionfruit pulp.
- Pour the filling over the cooled crust and smooth the top.
- Bake for 50-60 minutes until the edges are set but the center jiggles slightly.
- Turn off the oven and leave the cheesecake inside for an additional hour.
- Let the cheesecake cool to room temperature, then refrigerate for at least 4 hours or overnight.
