  • 2 tablespoons pandan juice (or pandan extract)
  • 30 grams (2 tablespoons) unsalted butter, melted
  • 200 ml (3/4 cup) coconut cream
  • 50 grams (1/4 cup) powdered sugar (for filling)
  • 1/2 teaspoon vanilla extract
  • Powdered sugar (for dusting)
  • Fresh pandan leaves (for garnish)

Instructions

  1. Prepare the cake batter by whisking eggs and sugar until pale and fluffy.
  2. Sift together flour, baking powder, and salt, then fold into the egg mixture.
  3. Fold in pandan juice and melted butter, then pour into a baking tray.
  4. Bake at 180°C (350°F) for 12-15 minutes until golden.
  5. Prepare the filling by whisking coconut cream, powdered sugar, and vanilla until smooth.
  6. Cool the cake, then roll it up in a towel to shape.
  7. Unroll the cake, spread the filling, and roll it back up tightly.
