- 1/4 teaspoon salt
- 2 tablespoons pandan juice (or pandan extract)
- 30 grams (2 tablespoons) unsalted butter, melted
- 200 ml (3/4 cup) coconut cream
- 50 grams (1/4 cup) powdered sugar (for filling)
- 1/2 teaspoon vanilla extract
- Powdered sugar (for dusting)
- Fresh pandan leaves (for garnish)
Instructions
- Prepare the cake batter by whisking eggs and sugar until pale and fluffy.
- Sift together flour, baking powder, and salt, then fold into the egg mixture.
- Fold in pandan juice and melted butter, then pour into a baking tray.
- Bake at 180°C (350°F) for 12-15 minutes until golden.
- Prepare the filling by whisking coconut cream, powdered sugar, and vanilla until smooth.
- Cool the cake, then roll it up in a towel to shape.
- Unroll the cake, spread the filling, and roll it back up tightly.
- Wrap in plastic wrap and refrigerate for at least 1 hour before serving.
