Description

Pan seared shrimp with peanuts and lime is a delightful meal that combines the sweetness of shrimp with the crunch of peanuts and the zesty kick of lime.


Ingredients

  • 500 grams (1 lb) fresh shrimp, peeled and deveined
  • 100 grams (3.5 oz) roasted peanuts, roughly chopped
  • 1 tablespoon black pepper, freshly ground
  • 2 tablespoons lime juice, freshly squeezed
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/4 cup fresh cilantro, chopped
  • Salt, to taste

Instructions

  1. Rinse the fresh shrimp under cold water and pat dry with paper towels. Season with salt and half of the black pepper.
  2. In a small bowl, combine lime juice with the remaining black pepper and set aside.
  3. Heat olive oil in a large skillet over medium-high heat. Sauté minced garlic for about 30 seconds until fragrant.
  4. Add the seasoned shrimp to the skillet and cook for 2-3 minutes on one side until golden brown, then flip and cook for another 2-3 minutes until opaque.
  5. Add chopped roasted peanuts to the skillet and stir well. Cook for an additional minute, then drizzle the lime juice mixture over the shrimp and peanuts, tossing gently to coat.
  6. Transfer the shrimp to a serving platter and garnish with chopped cilantro. Serve immediately.
