- 500 grams (1 lb) fresh shrimp, peeled and deveined
- 100 grams (3.5 oz) roasted peanuts, roughly chopped
- 1 tablespoon black pepper, freshly ground
- 2 tablespoons lime juice, freshly squeezed
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1/4 cup fresh cilantro, chopped
- Salt, to taste
Instructions
- Rinse the fresh shrimp under cold water and pat dry with paper towels. Season with salt and half of the black pepper.
- In a small bowl, combine lime juice with the remaining black pepper and set aside.
- Heat olive oil in a large skillet over medium-high heat. Sauté minced garlic for about 30 seconds until fragrant.
- Add the seasoned shrimp to the skillet and cook for 2-3 minutes on one side until golden brown, then flip and cook for another 2-3 minutes until opaque.
- Add chopped roasted peanuts to the skillet and stir well. Cook for an additional minute, then drizzle the lime juice mixture over the shrimp and peanuts, tossing gently to coat.
- Transfer the shrimp to a serving platter and garnish with chopped cilantro. Serve immediately.
