Description
Indian vegetable pakora fritters are a delightful snack made from a mix of vegetables coated in a spiced chickpea flour batter, deep-fried until golden brown.
Ingredients
- Chickpea flour (besan) – 1 cup (about 120 grams)
- Potatoes – 1 medium, thinly sliced
- Spinach – 1 cup, chopped
- Cauliflower – 1 cup, cut into small florets
- Onions – 1 medium, thinly sliced
- Cumin seeds – 1 teaspoon
- Coriander powder – 1 teaspoon
- Turmeric powder – 1/2 teaspoon
- Chili powder – 1 teaspoon (adjust to taste)
- Salt – to taste (about 1 teaspoon)
- Water – approximately 1/2 cup (adjust as needed)
- Oil – for deep frying (about 2 cups)
Instructions
- Start by washing all your vegetables thoroughly and chop them as needed.
- In a large mixing bowl, combine the chickpea flour, cumin seeds, coriander powder, turmeric powder, chili powder, and salt. Mix well.
- Gradually add water to the mixture, stirring continuously until you achieve a smooth, thick batter.
- Carefully add the sliced potatoes, chopped spinach, cauliflower florets, and sliced onions to the batter. Mix gently to coat the vegetables.
- Heat oil in a deep frying pan over medium heat. Drop spoonfuls of the batter-coated vegetable mixture into the hot oil and fry until golden brown and crispy, about 4-5 minutes.
- Remove the pakoras from the oil and place them on paper towels to drain excess oil. Serve hot with chutneys.
