  • Eggs: 4 large
  • Heavy cream: 1 cup (240 ml)
  • Milk: 1 cup (240 ml)
  • Vanilla extract: 2 teaspoons
  • Brown sugar: 1/2 cup (100 g), packed
  • Ground cinnamon: 1 teaspoon
  • Salt: 1/4 teaspoon
  • Granulated sugar: for caramelizing the top (about 1/4 cup or 50 g)

Instructions

  1. Prepare the brioche bread by arranging 8 thick slices in a greased 9×13 inch baking dish.
  2. Make the custard mixture by whisking together eggs, heavy cream, milk, vanilla extract, brown sugar, ground cinnamon, and salt in a large mixing bowl.
  3. Pour the custard mixture evenly over the prepared brioche slices, ensuring each slice is well soaked.
  4. Cover the baking dish with plastic wrap and refrigerate overnight or for at least 4 hours.
  5. Preheat the oven to 350°F (175°C) the next day, remove the plastic wrap, and bake for 35-40 minutes until golden brown and set.
