- Zest of 2 oranges

- 1/2 cup (50g) shelled pistachios, chopped
- 1/2 cup (120ml) orange juice
- 1/4 cup (50g) sugar for syrup
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- Cream the softened butter and sugar until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition.
- Stir in yogurt, orange zest, vanilla extract, and saffron mixture.
- Gently fold the dry ingredients into the wet mixture until just combined.
- Fold in the chopped pistachios.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45-50 minutes, checking with a toothpick for doneness.
- While the cake bakes, prepare the syrup by heating orange juice and sugar until dissolved.
- Once the cake is out of the oven, prick the top and pour the warm syrup over it.
- Let the cake absorb the syrup for 10-15 minutes before serving.
