Ingredients

  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • A pinch of saffron threads
  • 1/2 cup (115g) unsalted butter, softened
  • 3 large eggs
  • 1/2 cup (120ml) plain yogurt
  • Zest of 2 oranges
  • 1 tsp vanilla extract
  • 1/2 cup (50g) shelled pistachios, chopped
  • 1/2 cup (120ml) orange juice
  • 1/4 cup (50g) sugar for syrup

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cream the softened butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition.
  5. Stir in yogurt, orange zest, vanilla extract, and saffron mixture.
  6. Gently fold the dry ingredients into the wet mixture until just combined.
  7. Fold in the chopped pistachios.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 45-50 minutes, checking with a toothpick for doneness.
  10. While the cake bakes, prepare the syrup by heating orange juice and sugar until dissolved.
  11. Once the cake is out of the oven, prick the top and pour the warm syrup over it.
  12. Let the cake absorb the syrup for 10-15 minutes before serving.
