  • 3/4 cup (150g) granulated sugar

  • Zest of 2 oranges
  • 1/2 cup (120ml) fresh orange juice
  • 1 tsp rose water
  • 1/2 cup (60g) chopped pistachios, plus extra for topping
  • 1/4 cup (60ml) milk or yogurt
  • Powdered sugar for dusting

Instructions

  1. Prep your ingredients by measuring them accurately and softening the butter.
  2. Mix the dry ingredients: semolina, all-purpose flour, baking powder, and salt in a medium bowl.
  3. Cream the softened butter and granulated sugar in a large mixing bowl until light and fluffy, then add eggs one at a time, mixing well after each addition. Stir in orange zest, juice, rose water, and milk or yogurt.
  4. Gently fold the dry mixture into the wet mixture until just combined, then fold in chopped pistachios.
  5. Preheat the oven to 350°F (175°C). Pour the batter into a prepared cake pan, sprinkle with extra pistachios, and bake for 40-45 minutes.
