- 1/2 cup (60g) all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 3 large eggs
- Zest of 2 oranges
- 1/2 cup (120ml) fresh orange juice
- 1 tsp rose water
- 1/2 cup (60g) chopped pistachios, plus extra for topping
- 1/4 cup (60ml) milk or yogurt
- Powdered sugar for dusting
Instructions
- Prep your ingredients by measuring them accurately and softening the butter.
- Mix the dry ingredients: semolina, all-purpose flour, baking powder, and salt in a medium bowl.
- Cream the softened butter and granulated sugar in a large mixing bowl until light and fluffy, then add eggs one at a time, mixing well after each addition. Stir in orange zest, juice, rose water, and milk or yogurt.
- Gently fold the dry mixture into the wet mixture until just combined, then fold in chopped pistachios.
- Preheat the oven to 350°F (175°C). Pour the batter into a prepared cake pan, sprinkle with extra pistachios, and bake for 40-45 minutes.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar before serving.
