- 1 cup (160g) fine polenta (cornmeal)
- 1 cup (125g) all-purpose flour
- 1 ½ tsp baking powder
- ¼ tsp salt
- ¾ cup (170g) unsalted butter, softened
- ¾ cup (150g) granulated sugar
- 3 large eggs
- Zest of 2 large oranges
- ½ cup (120ml) fresh orange juice
- ½ cup (60g) shelled pistachios, chopped
For the Rose Glaze:
- 1 cup (120g) powdered sugar
- 2–3 tbsp rose water
- 1 tsp lemon juice
- Extra chopped pistachios for garnish
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8-inch round cake pan by greasing it and lining the bottom with parchment paper.
- In a medium bowl, whisk together the fine polenta, all-purpose flour, baking powder, and salt.
- In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the orange zest and juice.
- Gradually fold the dry mixture into the wet mixture, being careful not to overmix. Gently fold in the chopped pistachios.
- Pour the batter into the prepared cake pan and smooth the surface. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely in the pan.
- Prepare the rose glaze by whisking together the powdered sugar, rose water, and lemon juice until smooth.
- Once the cake has cooled, remove it from the pan, place it on a serving plate, and drizzle the rose glaze over the top. Garnish with extra chopped pistachios.
