- 3 large eggs
- 2/3 cup honey
- 1 cup ground pistachios
- 2 cups almond flour
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 cup fresh orange juice
- 2 tablespoons honey (for the glaze)
Instructions
- Rinse the oranges and place them in a pot with water. Simmer over low heat for 1 hour to soften and remove bitterness.
- Drain and cool the oranges. Blend into a smooth puree and set aside.
- Preheat the oven to 350°F (175°C) and lightly grease a 9-inch springform pan.
- In a large bowl, combine orange puree, eggs, honey, ground pistachios, almond flour, vanilla extract, and baking soda. Mix until smooth.
- Pour the batter into the prepared pan and bake for 1 hour. Cover with foil if browning too quickly. Check doneness with a toothpick.
- Let the cake cool for 10 minutes in the pan.
- Meanwhile, make the glaze by simmering orange juice and honey until reduced by half and syrupy.
- Brush the glaze over the warm cake. Let it cool completely before removing from the pan and serving.
