  • 3 large eggs
  • 2/3 cup honey
  • 1 cup ground pistachios
  • 2 cups almond flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 cup fresh orange juice
  • 2 tablespoons honey (for the glaze)

Instructions

  1. Rinse the oranges and place them in a pot with water. Simmer over low heat for 1 hour to soften and remove bitterness.
  2. Drain and cool the oranges. Blend into a smooth puree and set aside.
  3. Preheat the oven to 350°F (175°C) and lightly grease a 9-inch springform pan.
  4. In a large bowl, combine orange puree, eggs, honey, ground pistachios, almond flour, vanilla extract, and baking soda. Mix until smooth.

  7. Meanwhile, make the glaze by simmering orange juice and honey until reduced by half and syrupy.
