- 1/2 cup (120ml) boiling water
- 1 tsp baking soda
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- Zest of 1 large orange
- 1 cup (120g) all-purpose flour
- 1/2 cup (60g) almond flour
- 1 tsp baking powder
- Pinch of salt
For the honey drizzle:
- 1/3 cup (80ml) honey
- 2 tbsp fresh orange juice
For the almond topping:
- 1/2 cup (60g) sliced almonds
- 1 tbsp sugar
- 1 tbsp butter
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and line a round cake pan with parchment paper. Soak chopped dates in boiling water with baking soda for 10 minutes.
- Cream together softened butter and brown sugar until fluffy. Beat in eggs one at a time, then add vanilla extract and orange zest. Fold in softened dates.
- Mix all-purpose flour, almond flour, baking powder, and salt in a separate bowl. Gently fold this into the wet ingredients until just combined.
- Pour the batter into the prepared cake pan. Melt butter, stir in sugar and sliced almonds, and sprinkle over the batter. Bake for 35-40 minutes.
- Cool the cake for 10 minutes in the pan, then transfer to a wire rack. Drizzle honey and orange juice mixture over the warm cake before serving.
