Ingredients

  • 1 cup (180g) pitted dates, chopped
  • 1/2 cup (120ml) boiling water
  • 1 tsp baking soda
  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • Zest of 1 large orange
  • 1 cup (120g) all-purpose flour
  • 1/2 cup (60g) almond flour
  • 1 tsp baking powder
  • Pinch of salt

For the honey drizzle:

  • 1/3 cup (80ml) honey
  • 2 tbsp fresh orange juice

For the almond topping:

  • 1/2 cup (60g) sliced almonds
  • 1 tbsp sugar
  • 1 tbsp butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and line a round cake pan with parchment paper. Soak chopped dates in boiling water with baking soda for 10 minutes.
  3. Cream together softened butter and brown sugar until fluffy. Beat in eggs one at a time, then add vanilla extract and orange zest. Fold in softened dates.
  4. Mix all-purpose flour, almond flour, baking powder, and salt in a separate bowl. Gently fold this into the wet ingredients until just combined.
  5. Pour the batter into the prepared cake pan. Melt butter, stir in sugar and sliced almonds, and sprinkle over the batter. Bake for 35-40 minutes.
  6. Cool the cake for 10 minutes in the pan, then transfer to a wire rack. Drizzle honey and orange juice mixture over the warm cake before serving.
