- 1/4 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1/2 teaspoon ground cinnamon
- 3 tablespoons unsalted butter, cold and cubed
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 large egg, at room temperature
- 1/2 cup packed light or dark brown sugar
- 1/2 cup granulated sugar
- 1 cup buttermilk, at room temperature
- 1/3 cup vegetable oil
- 1 teaspoon pure vanilla extract
- 2 teaspoons orange zest
- 1 cup cranberries, fresh or frozen
- Optional: 1/2 cup chopped pecans or walnuts
- 1 cup confectioners sugar
- 1–2 tablespoons orange juice
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a small bowl, mix 1/4 cup flour, 2 tbsp sugar, and 1/2 tsp cinnamon. Cut in cold butter until crumbly. Chill streusel in the fridge.
- In a large bowl, whisk together 2 cups flour, baking soda, and salt.
- In another bowl, whisk egg, brown sugar, granulated sugar, buttermilk, oil, vanilla extract, and orange zest.
- Pour wet mixture into dry mixture and gently mix until just combined.
- Fold in cranberries and optional nuts.
- Pour batter into prepared pan. Sprinkle streusel on top and press down lightly.
- Bake for 45–60 minutes, covering loosely with foil if browning too quickly. Check doneness with a toothpick.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
- In a bowl, mix confectioners sugar with orange juice until smooth. Drizzle over cooled bread and let set.

- Do not overmix the batter to avoid a dense texture.
- Use fresh orange zest for the best flavor.
- Frozen cranberries can be used without thawing.
- Cool bread completely before glazing for a clean finish.
