Description

Orange Glazed Cranberry Bread is a moist, tender loaf combining bright citrus flavor with tart cranberries, topped with a sweet orange glaze. Perfect for holidays, breakfast, or cozy snacking.

  • 2 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 3 tablespoons unsalted butter, cold and cubed
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg, at room temperature
  • 1/2 cup packed light or dark brown sugar
  • 1/2 cup granulated sugar
  • 1 cup buttermilk, at room temperature
  • 1/3 cup vegetable oil
  • 1 teaspoon pure vanilla extract
  • 2 teaspoons orange zest
  • 1 cup cranberries, fresh or frozen
  • Optional: 1/2 cup chopped pecans or walnuts
  • 1 cup confectioners sugar
  • 12 tablespoons orange juice

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a small bowl, mix 1/4 cup flour, 2 tbsp sugar, and 1/2 tsp cinnamon. Cut in cold butter until crumbly. Chill streusel in the fridge.
  3. In a large bowl, whisk together 2 cups flour, baking soda, and salt.
  4. In another bowl, whisk egg, brown sugar, granulated sugar, buttermilk, oil, vanilla extract, and orange zest.
  5. Pour wet mixture into dry mixture and gently mix until just combined.
  6. Fold in cranberries and optional nuts.
  7. Pour batter into prepared pan. Sprinkle streusel on top and press down lightly.
  8. Bake for 45–60 minutes, covering loosely with foil if browning too quickly. Check doneness with a toothpick.
  9. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. In a bowl, mix confectioners sugar with orange juice until smooth. Drizzle over cooled bread and let set.
