  • 1 tsp ground cardamom
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 100g (3/4 cup) shelled pistachios, chopped
  • 120ml (1/2 cup) freshly squeezed orange juice
  • 100g (1/2 cup) powdered sugar

Instructions

  1. Preheat your oven to 175°C (350°F) and prepare an 8-inch round cake pan by greasing it and lining the bottom with parchment paper.
  2. In a large mixing bowl, whisk together the all-purpose flour, baking powder, ground cardamom, and salt.
  3. In another bowl, beat the granulated sugar and eggs together until pale and fluffy.
  4. Gradually add the vegetable oil, freshly squeezed orange juice, orange zest, and orange blossom water to the egg and sugar mixture, mixing well.
  5. Gently fold the dry ingredients into the wet mixture until just combined.
  6. Fold in the chopped pistachios evenly throughout the batter.
  7. Pour the batter into the prepared cake pan and smooth the top. Bake for 35-40 minutes, checking for doneness with a toothpick.
  8. Once baked, cool the cake in the pan for 10 minutes before transferring it to a wire rack to cool completely. Prepare the orange glaze while cooling.
