- 1 cup (125g) all-purpose flour
- 1 cup (100g) almond flour
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup (115g) unsalted butter, softened
- ¾ cup (150g) granulated sugar
- 2 large eggs
- ½ cup (120ml) plain yogurt
- ¼ cup (60ml) orange blossom water
- Zest of 1 large orange
- ½ cup (60g) shelled pistachios, roughly chopped
For the saffron syrup:
- ½ cup (120ml) water
- ½ cup (100g) sugar
- A pinch of saffron threads, soaked in 1 tbsp warm water
- 1 tbsp lemon juice
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8-inch round cake pan.
- In a medium bowl, whisk together the all-purpose flour, almond flour, baking powder, baking soda, and salt.
- In a large mixing bowl, cream the softened butter and granulated sugar until pale and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the plain yogurt, orange blossom water, and orange zest.
- Gradually fold in the dry ingredients until just combined, then stir in the chopped pistachios.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
- While the cake is baking, prepare the saffron syrup by combining water, sugar, saffron, and lemon juice in a saucepan and simmering until the sugar dissolves.
- Allow the cake to cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.
- Drizzle the saffron syrup over the warm cake and garnish with extra chopped pistachios if desired.
