Ingredients

  • 1 cup (125g) all-purpose flour
  • 1 cup (100g) almond flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 2 large eggs
  • ½ cup (120ml) plain yogurt
  • ¼ cup (60ml) orange blossom water
  • Zest of 1 large orange
  • ½ cup (60g) shelled pistachios, roughly chopped

For the saffron syrup:

  • ½ cup (120ml) water
  • ½ cup (100g) sugar
  • A pinch of saffron threads, soaked in 1 tbsp warm water
  • 1 tbsp lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8-inch round cake pan.
  2. In a medium bowl, whisk together the all-purpose flour, almond flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, cream the softened butter and granulated sugar until pale and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the plain yogurt, orange blossom water, and orange zest.
  6. Gradually fold in the dry ingredients until just combined, then stir in the chopped pistachios.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
  9. While the cake is baking, prepare the saffron syrup by combining water, sugar, saffron, and lemon juice in a saucepan and simmering until the sugar dissolves.
  10. Allow the cake to cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.
  11. Drizzle the saffron syrup over the warm cake and garnish with extra chopped pistachios if desired.
