Description

Ingredients

  • 1 ¾ cups (220g) all-purpose flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • Zest of 2 large oranges
  • ¾ cup (150g) granulated sugar
  • ½ cup (115g) unsalted butter, softened
  • 3 large eggs
  • ½ cup (120ml) fresh orange juice
  • ½ cup (60g) shelled pistachios, chopped

For the Honey and Rosewater Glaze:

  • ½ cup (120ml) honey
  • 1 tbsp rosewater
  • 1 tbsp fresh orange juice

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare an 8-inch round cake pan.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. Zest the oranges and set aside.
  4. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Pour in the fresh orange juice and mix until combined.
  7. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  8. Fold in the chopped pistachios.
  9. Pour the batter into the prepared cake pan and smooth the top.
  10. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  11. Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  12. While the cake cools, prepare the glaze by warming honey, rosewater, and orange juice in a small saucepan over low heat.
  13. Poke holes in the cooled cake and drizzle the warm glaze over the top, allowing it to soak in.
  14. Let the cake absorb the glaze and cool completely before serving.
