A delightful cake combining the vibrant flavors of orange and the nutty crunch of pistachios, topped with a sweet honey rosewater glaze.

- 1 ¾ cups (220g) all-purpose flour
- 1 ½ tsp baking powder
- ¼ tsp salt
- Zest of 2 large oranges
- ¾ cup (150g) granulated sugar
- ½ cup (115g) unsalted butter, softened
- 3 large eggs
- ½ cup (120ml) fresh orange juice
- ½ cup (60g) shelled pistachios, chopped
For the Honey and Rosewater Glaze:
- ½ cup (120ml) honey
- 1 tbsp rosewater
- 1 tbsp fresh orange juice
Instructions
- Preheat the oven to 350°F (175°C) and prepare an 8-inch round cake pan.
- In a medium bowl, whisk together flour, baking powder, and salt.
- Zest the oranges and set aside.
- In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Pour in the fresh orange juice and mix until combined.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Fold in the chopped pistachios.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- While the cake cools, prepare the glaze by warming honey, rosewater, and orange juice in a small saucepan over low heat.
- Poke holes in the cooled cake and drizzle the warm glaze over the top, allowing it to soak in.
- Let the cake absorb the glaze and cool completely before serving.
