- 3 large eggs

- 120g unsalted butter, softened (1/2 cup)
- 120ml fresh orange juice (about 1/2 cup)
- Zest of 1 large orange
- 200g dates, pitted and chopped (about 1 1/2 cups)
- 100g walnuts, chopped (about 1 cup)
- 1 teaspoon vanilla extract
- 50ml milk (about 1/4 cup)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.
- In a large bowl, cream together the butter and granulated sugar until light and fluffy.
- Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and orange juice.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until smooth.
- Gently fold in the chopped dates, orange zest, and walnuts.
- Pour the batter into the prepared cake pan and spread it evenly.
- Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
- If the cake’s top browns too quickly, cover loosely with foil and continue baking until done.
- Store the cake in an airtight container at room temperature for up to 3 days, or refrigerate for longer storage.
- For a dairy-free version, swap the butter for coconut oil and the milk for almond milk.
