Description

A moist and flavorful Orange and Date Cake with walnuts, perfect for any occasion. This easy-to-make dessert combines the sweetness of dates, the zesty orange, and the crunch of walnuts for a delightful treat.

Ingredients

Scale
  • 240g all-purpose flour (about 2 cups)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3 large eggs
  • 150g granulated sugar (3/4 cup)
  • 120g unsalted butter, softened (1/2 cup)
  • 120ml fresh orange juice (about 1/2 cup)
  • Zest of 1 large orange
  • 200g dates, pitted and chopped (about 1 1/2 cups)
  • 100g walnuts, chopped (about 1 cup)
  • 1 teaspoon vanilla extract
  • 50ml milk (about 1/4 cup)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  4. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and orange juice.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until smooth.
  6. Gently fold in the chopped dates, orange zest, and walnuts.
  7. Pour the batter into the prepared cake pan and spread it evenly.
  8. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • If the cake’s top browns too quickly, cover loosely with foil and continue baking until done.
  • Store the cake in an airtight container at room temperature for up to 3 days, or refrigerate for longer storage.
  • For a dairy-free version, swap the butter for coconut oil and the milk for almond milk.
  • You can use pecans or almonds instead of walnuts for a different flavor and texture.
