A flavorful one pot dish featuring Cajun sausage and rice.
Ingredients

- 1 pound Cajun sausage, sliced
- 1 cup long-grain rice
- 1 medium onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 tablespoon Cajun seasoning
- 1 can diced tomatoes (14.5 oz)
- Salt and pepper to taste
Instructions
- In a large pot, heat the sausage over medium heat until browned.
- Add the onion, bell pepper, and garlic. Sauté until vegetables are soft.
- Stir in the rice and Cajun seasoning, cooking for 2 minutes.
- Add the chicken broth and diced tomatoes. Bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes or until rice is cooked.
- Season with salt and pepper as needed. Serve hot.
Notes
- For extra heat, add hot sauce.
- Use brown rice for a healthier option, but adjust cooking time.
