- 2 boneless, skinless chicken breasts (about 1 lb or 450 g), cut into bite-sized pieces
- 8 oz (225 g) penne pasta
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz or 400 g) diced tomatoes, undrained
- 1 cup (about 4 oz or 115 g) mozzarella cheese, shredded
- 2 teaspoons Italian seasoning
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil leaves, for garnish
Instructions
- Prepare the chicken by cutting it into bite-sized pieces and seasoning with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium heat and cook the chicken for 5-7 minutes until browned and cooked through. Remove and set aside.
- In the same skillet, sauté chopped onion and sliced bell peppers for 4-5 minutes until tender, then add minced garlic and cook for an additional minute.
- Add penne pasta and diced tomatoes (with juice) to the skillet, along with enough water to cover the pasta. Bring to a boil, then reduce heat to a simmer and cover. Cook for 10-12 minutes, stirring occasionally.
- Return the cooked chicken to the skillet and stir to combine. Adjust consistency with more water or broth if needed.
- Sprinkle shredded mozzarella cheese over the top, cover, and cook for an additional 2-3 minutes until cheese is melted.
- Garnish with fresh basil leaves and serve warm.

- Be careful not to overcook the chicken to avoid dryness.
- Stir the pasta occasionally to prevent sticking.
- Add enough water to cover the pasta for proper cooking.
