Ingredients

  • 2 boneless, skinless chicken breasts (about 1 lb or 450 g), cut into bite-sized pieces
  • 8 oz (225 g) penne pasta
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz or 400 g) diced tomatoes, undrained
  • 1 cup (about 4 oz or 115 g) mozzarella cheese, shredded
  • 2 teaspoons Italian seasoning
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Prepare the chicken by cutting it into bite-sized pieces and seasoning with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium heat and cook the chicken for 5-7 minutes until browned and cooked through. Remove and set aside.
  3. In the same skillet, sauté chopped onion and sliced bell peppers for 4-5 minutes until tender, then add minced garlic and cook for an additional minute.
  4. Add penne pasta and diced tomatoes (with juice) to the skillet, along with enough water to cover the pasta. Bring to a boil, then reduce heat to a simmer and cover. Cook for 10-12 minutes, stirring occasionally.
  5. Return the cooked chicken to the skillet and stir to combine. Adjust consistency with more water or broth if needed.
  6. Sprinkle shredded mozzarella cheese over the top, cover, and cook for an additional 2-3 minutes until cheese is melted.
  7. Garnish with fresh basil leaves and serve warm.

  • Be careful not to overcook the chicken to avoid dryness.
  • Stir the pasta occasionally to prevent sticking.
  • Add enough water to cover the pasta for proper cooking.
