Description

One-pan lemon herb salmon with zucchini is a quick and healthy dinner option that combines rich flavors of salmon with fresh zucchini, all cooked together in one pan.

Ingredients

  • Salmon fillets: 4 pieces (about 6 oz each)
  • Zucchini: 2 medium, sliced into half-moons
  • Olive oil: 3 tablespoons
  • Lemon juice: 2 tablespoons (freshly squeezed)
  • Garlic: 3 cloves, minced
  • Fresh dill: 2 tablespoons, chopped (or 1 tablespoon dried dill)
  • Salt: 1 teaspoon (or to taste)
  • Black pepper: 1/2 teaspoon (or to taste)
  • Lemon slices: for garnish (optional)

Instructions

  1. Wash the zucchini thoroughly and slice them into half-moons.
  2. Pat the salmon fillets dry with a paper towel.
  3. In a small bowl, mix together olive oil, lemon juice, minced garlic, chopped dill, salt, and black pepper to create the marinade.
  4. Let the salmon marinate for about 30 minutes (optional).
  5. Heat a non-stick skillet over medium heat and sauté the sliced zucchini for about 3-4 minutes until they start to soften.
  6. On a large baking sheet, place the marinated salmon fillets in the center and surround them with the sautéed zucchini.
  7. Preheat the oven to 400°F (200°C) and bake for about 15-20 minutes until the salmon is cooked through and flakes easily with a fork.
  8. Remove from the oven and let cool for a minute before serving.

Notes

  • For best results, use fresh, wild-caught salmon.
  • Consider adding other vegetables like cherry tomatoes or bell peppers for added flavor and nutrition.
