Description

A simple yet delicious one pan meal combining savory kielbasa sausage, tender potatoes, and colorful vegetables, perfect for busy weeknights.

Ingredients

  • Kielbasa sausage: 1 lb (about 450 g), sliced into rounds.
  • Baby potatoes: 1 lb (about 450 g), halved.
  • Bell peppers: 2 medium (any color), sliced.
  • Onion: 1 medium, sliced.
  • Garlic: 3 cloves, minced.
  • Olive oil: 3 tablespoons.
  • Paprika: 1 teaspoon.
  • Salt: 1 teaspoon (or to taste).
  • Black pepper: 1/2 teaspoon (or to taste).
  • Fresh parsley: for garnish (optional).

Instructions

  1. Prepare the ingredients by washing and halving the baby potatoes, slicing the bell peppers and onion, and mincing the garlic.
  2. In a large mixing bowl, combine the halved baby potatoes, sliced bell peppers, sliced onion, and minced garlic. Drizzle with olive oil and sprinkle with paprika, salt, and black pepper. Toss to coat.
  3. Add the sliced kielbasa to the bowl and toss again to mix well.
  4. Transfer the mixture to a baking sheet or roasting pan, spreading it out in an even layer.
  5. Roast in a preheated oven at 400°F (200°C) for about 25-30 minutes, stirring halfway through, until the potatoes are fork-tender and the kielbasa is golden brown. Garnish with fresh parsley if desired and serve warm.

Notes

  • Feel free to swap out vegetables based on personal preferences or what you have on hand.
  • For a spicy twist, consider adding red pepper flakes or using spicy sausage.
  • Store leftovers in an airtight container in the refrigerator for up to three days.
