  • Soy sauce: 1/4 cup (60 ml)
  • Olive oil: 2 tablespoons (30 ml)
  • Salt: 1 teaspoon (to taste)
  • Pepper: 1/2 teaspoon (to taste)
  • Fresh thyme: 1 tablespoon (chopped, or more for garnish)

Instructions

  1. Wash the baby potatoes thoroughly and pat the chicken thighs dry with paper towels.
  2. In a large bowl, combine the chicken thighs, baby potatoes, olive oil, salt, and pepper. Toss until well coated.
