- 2 boneless, skinless chicken breasts (about 1 lb or 450 g)
- 2 cups broccoli florets (fresh or frozen)
- 1 cup long-grain rice (uncooked)
- 1 cup shredded cheddar cheese (about 4 oz or 113 g)
- 2 cups chicken broth (low-sodium preferred)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Cut the chicken breasts into bite-sized pieces and season with salt, pepper, garlic powder, and onion powder.
- In a large skillet, heat olive oil over medium-high heat and cook the seasoned chicken for 5-7 minutes until browned and cooked through. Remove and set aside.
- Add uncooked rice to the same skillet and toast for 1-2 minutes, stirring frequently.
- Pour in chicken broth, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
- Add broccoli florets on top of the rice, cover, and cook for an additional 5 minutes.
- Return the cooked chicken to the skillet, stir gently, and sprinkle shredded cheddar cheese on top. Cover and let sit for 2-3 minutes to melt the cheese.
- Fluff the rice with a fork, mix in chicken and broccoli, adjust seasoning if needed, and serve warm.
Notes
- For a spicier kick, consider using pepper jack cheese.
- Adjust cooking times based on your stove and pan type.
- Frozen broccoli may cook faster than fresh; add it during the last 3 minutes of cooking.
