Description

One-pan cheesy chicken broccoli rice is a delicious and easy meal that combines tender chicken, vibrant broccoli, and fluffy rice, all smothered in gooey cheese.


Ingredients

  • 2 boneless, skinless chicken breasts (about 1 lb or 450 g)
  • 2 cups broccoli florets (fresh or frozen)
  • 1 cup long-grain rice (uncooked)
  • 1 cup shredded cheddar cheese (about 4 oz or 113 g)
  • 2 cups chicken broth (low-sodium preferred)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Cut the chicken breasts into bite-sized pieces and season with salt, pepper, garlic powder, and onion powder.
  2. In a large skillet, heat olive oil over medium-high heat and cook the seasoned chicken for 5-7 minutes until browned and cooked through. Remove and set aside.
  3. Add uncooked rice to the same skillet and toast for 1-2 minutes, stirring frequently.
  4. Pour in chicken broth, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  5. Add broccoli florets on top of the rice, cover, and cook for an additional 5 minutes.
  6. Return the cooked chicken to the skillet, stir gently, and sprinkle shredded cheddar cheese on top. Cover and let sit for 2-3 minutes to melt the cheese.
  7. Fluff the rice with a fork, mix in chicken and broccoli, adjust seasoning if needed, and serve warm.

  • For a spicier kick, consider using pepper jack cheese.
  • Adjust cooking times based on your stove and pan type.
  • Frozen broccoli may cook faster than fresh; add it during the last 3 minutes of cooking.
