- 1 and 1/2 cups cake flour, spooned and leveled
- 1 teaspoon baking powder

- 2 large egg whites, at room temperature
- 1/3 cup sour cream, at room temperature
- 1 teaspoon pure vanilla extract
- 1/3 cup whole milk, at room temperature
- 1/2 cup sprinkles
- For Vanilla Buttercream:
- 3/4 cup unsalted butter, softened to room temperature
- 3 cups confectioners sugar
- 3 tablespoons heavy cream, half and half, or whole milk
- 1 teaspoon pure vanilla extract
- Salt to taste
- Optional: additional sprinkles for garnish
Instructions
- Preheat oven to 350°F (177°C). Grease and line a 9×2 inch round cake pan with parchment paper.
- In a bowl, whisk cake flour, baking powder, baking soda, and salt. Set aside.
- In another bowl, beat softened butter until creamy. Add granulated sugar and beat until fluffy.
- Mix in egg whites, sour cream, and vanilla extract. Beat until combined.
- Gradually add dry ingredients while pouring in milk. Mix until just combined. Fold in sprinkles.
- Pour batter into prepared pan. Smooth the top and bake for 27–31 minutes or until a toothpick comes out clean. Tent with foil if browning too quickly.
- Let cake cool completely in the pan.
- To make buttercream, beat softened butter until creamy. Add confectioners sugar, then cream and vanilla extract. Beat for 2 minutes. Adjust consistency with more cream or sugar if needed. Add salt to taste.
- Frost the cooled cake with buttercream and garnish with sprinkles.
- Slice, serve, and enjoy!
