Description

  • For Vanilla Buttercream:
  • 3/4 cup unsalted butter, softened to room temperature
  • 3 cups confectioners sugar
  • 3 tablespoons heavy cream, half and half, or whole milk
  • 1 teaspoon pure vanilla extract
  • Salt to taste
  • Optional: additional sprinkles for garnish

Instructions

  1. Preheat oven to 350°F (177°C). Grease and line a 9×2 inch round cake pan with parchment paper.
  2. In a bowl, whisk cake flour, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, beat softened butter until creamy. Add granulated sugar and beat until fluffy.
  4. Mix in egg whites, sour cream, and vanilla extract. Beat until combined.
  5. Gradually add dry ingredients while pouring in milk. Mix until just combined. Fold in sprinkles.
  6. Pour batter into prepared pan. Smooth the top and bake for 27–31 minutes or until a toothpick comes out clean. Tent with foil if browning too quickly.
  7. Let cake cool completely in the pan.
  8. To make buttercream, beat softened butter until creamy. Add confectioners sugar, then cream and vanilla extract. Beat for 2 minutes. Adjust consistency with more cream or sugar if needed. Add salt to taste.
  9. Frost the cooled cake with buttercream and garnish with sprinkles.
  10. Slice, serve, and enjoy!
