Ingredients
- Chickpea flour: 1 cup (about 120 grams)
- Water: 1 cup (about 240 ml)
- Olive oil: 2 tablespoons (30 ml), plus extra for greasing
- Salt: 1/2 teaspoon (about 3 grams)
Instructions
- Gather all your ingredients: chickpea flour, water, olive oil, and salt.
- In a mixing bowl, combine chickpea flour and salt, then gradually whisk in water until smooth. Let the batter rest for at least 30 minutes.
- Preheat your oven to 450°F (230°C) and place a cast-iron skillet or baking sheet inside to warm up.
- Once the skillet is hot, add 2 tablespoons of olive oil, swirl to coat, and pour in the rested batter. Bake for 20-25 minutes until golden brown and crispy.
- Remove from the oven, let cool for a minute, then cut into wedges or squares and serve warm.

- Rest the batter for at least 30 minutes for better texture.

- Don’t overcrowd the pan if making multiple batches.
