- 7 tablespoons unsalted butter, softened to room temperature
- 3/4 cup packed light or dark brown sugar
- 1 teaspoon pure vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup old-fashioned oats
- 1 (14-ounce) can full-fat sweetened condensed milk
- 6 tablespoons lemon juice, freshly squeezed
- 1 tablespoon lemon zest, freshly grated
Instructions
- Preheat the oven to 350°F (175°C).
- Line an 8-inch square baking pan with parchment paper.
- In a mixing bowl, beat the softened butter and brown sugar until creamy. Add the vanilla extract.
- In another bowl, mix flour, baking powder, and salt. Gradually add to the butter mixture, then fold in the oats.
- Press a little more than half of the crumble mixture into the bottom of the prepared baking pan. Bake for 12 minutes.
- While the crust bakes, whisk together sweetened condensed milk, lemon juice, and lemon zest in a separate bowl.
- Once the crust is baked, pour the lemon filling over it and spread evenly. Sprinkle the remaining crumble mixture on top.
- Bake the assembled bars for an additional 22-25 minutes until the edges are lightly browned.
- Allow bars to cool completely in the pan before cutting into squares.
Notes
For a dairy-free option, substitute unsalted butter with coconut oil. For a gluten-free version, use gluten-free flour and certified gluten-free oats.
