Description

Oatmeal cookie bars are a delightful twist on the classic cookie, combining wholesome oats with sweet flavors for a chewy and rich treat.

Ingredients

  • Rolled oats: 2 cups (about 180 g)
  • All-purpose flour: 1 cup (about 120 g)
  • Brown sugar: 1 cup (packed, about 220 g)
  • Granulated sugar: 1/2 cup (about 100 g)
  • Butter: 1 cup (unsalted, melted, about 227 g)
  • Eggs: 2 large
  • Vanilla extract: 2 teaspoons (about 10 ml)
  • Baking soda: 1 teaspoon (about 5 g)
  • Salt: 1/2 teaspoon (about 3 g)
  • Chocolate chips: 1 cup (about 170 g)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13-inch (23×33 cm) baking pan by greasing it or lining it with parchment paper.
  3. In a large bowl, mix the rolled oats, all-purpose flour, baking soda, and salt.
  4. In another bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Gradually add the dry oat mixture to the wet ingredients and stir gently until just combined.
  6. If using optional add-ins, fold them in along with the chocolate chips.
  7. Pour the batter into the prepared baking pan and spread it evenly.
  8. Bake for 25-30 minutes until the edges are golden brown and a toothpick inserted in the center comes out with a few moist crumbs.
  9. Let the bars cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely before cutting into squares or rectangles.

Notes

  • Overmixing the batter can lead to tough bars; mix just until combined.
  • Use measuring cups and spoons for accuracy in ingredient amounts.
  • Allow the bars to cool in the pan to prevent crumbling.
  • Check the freshness of your baking ingredients.
  • Always preheat your oven for even baking.
