- 1 cup mashed ripe bananas (about 2–3 bananas)
- 1/2 cup creamy peanut butter or almond butter
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/2 teaspoon baking powder
- Optional add-ins: 1/4 cup chocolate chips, nuts, dried fruit, or seeds
Instructions
- Preheat the oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
- In a large bowl, combine mashed bananas, peanut butter, honey (or maple syrup), and vanilla extract. Mix until smooth.
- In another bowl, combine oats, cinnamon, and baking powder. Add the dry mixture to the wet mixture and stir until well combined. Fold in optional add-ins like chocolate chips, nuts, or dried fruit.
- Pour the mixture into the prepared baking pan and press down firmly. Bake for 25-30 minutes, or until golden and a toothpick comes out clean.
- Cool in the pan for 10 minutes, then lift the parchment paper to remove the bars. Cool completely on a wire rack before slicing into bars.
Notes
- Ensure the bananas are ripe for better sweetness and flavor.
- For a vegan version, replace honey with maple syrup.
- To make gluten-free, use certified gluten-free oats.
