Description

Ingredients

  • 1 cup chopped unsalted hazelnuts
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 3 tablespoons ice water
  • 2 tablespoons cornstarch
  • 2 cups heavy cream
  • 3/4 cup Nutella
  • 1/8 teaspoon salt
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat oven to 300°F (150°C). Spread chopped hazelnuts on a baking sheet and toast for 5–7 minutes until fragrant. Let cool.
  2. Increase oven to 350°F (175°C). In a food processor, pulse 3/4 cup toasted hazelnuts, flour, sugar, and salt until coarse.
  3. Add cubed butter and pulse until crumbly. Transfer to a bowl and mix in ice water until dough forms.
  4. Press dough into a 9-inch tart pan. Cover with foil and add pie weights. Bake for 18–20 minutes. Cool on wire rack.
  5. In a bowl, whisk cornstarch and 1/2 cup heavy cream until smooth. In a saucepan, heat remaining cream, Nutella, and salt over medium heat. Bring to gentle boil and stir for 3 minutes.
  6. Remove from heat and stir in vanilla extract.
  7. Pour filling into cooled crust. Sprinkle remaining hazelnuts on top.
  8. Cover and chill in refrigerator for 3–4 hours until set.
  9. Slice and serve as desired.

  • Do not overwork the crust dough to avoid a tough texture.
  • Use a sharp, warm knife for clean slices.
  • For a flavor twist, add espresso powder or a layer of jam under the filling.
