- 1 cup chopped unsalted hazelnuts
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 3 tablespoons ice water
- 2 tablespoons cornstarch
- 2 cups heavy cream
- 3/4 cup Nutella
- 1/8 teaspoon salt
- 1 teaspoon pure vanilla extract
Instructions
- Preheat oven to 300°F (150°C). Spread chopped hazelnuts on a baking sheet and toast for 5–7 minutes until fragrant. Let cool.
- Increase oven to 350°F (175°C). In a food processor, pulse 3/4 cup toasted hazelnuts, flour, sugar, and salt until coarse.
- Add cubed butter and pulse until crumbly. Transfer to a bowl and mix in ice water until dough forms.
- Press dough into a 9-inch tart pan. Cover with foil and add pie weights. Bake for 18–20 minutes. Cool on wire rack.
- In a bowl, whisk cornstarch and 1/2 cup heavy cream until smooth. In a saucepan, heat remaining cream, Nutella, and salt over medium heat. Bring to gentle boil and stir for 3 minutes.
- Remove from heat and stir in vanilla extract.
- Pour filling into cooled crust. Sprinkle remaining hazelnuts on top.
- Cover and chill in refrigerator for 3–4 hours until set.
- Slice and serve as desired.

- Do not overwork the crust dough to avoid a tough texture.
- Use a sharp, warm knife for clean slices.
- For a flavor twist, add espresso powder or a layer of jam under the filling.
- Store covered in the fridge for up to 4 days or freeze for longer storage.
