  • 1 tbsp lemon juice, fresh
  • 1/3 cup sugar
  • 1 tbsp vanilla extract
  • 3 tbsp powdered sugar

Instructions

  1. Prepare the crust by pulsing graham crackers, toasted pecans, salt, and light brown sugar in a food processor. Add melted butter and pulse until the mixture resembles wet sand. Press it into a springform pan and chill for 30 minutes (optional: bake at 350°F for 10 minutes).
  2. Make the strawberry reduction by blending hulled strawberries, sugar, lemon juice, and cornstarch. Heat on medium-high until boiling, then simmer for 10-15 minutes until it reduces by half. Strain and chill.
  3. Prepare the filling by beating room temperature cream cheese in a stand mixer. Gradually add sugar, sweetened condensed milk, vanilla extract, and fresh lemon juice. Stir in half of the chilled strawberry reduction to create a marbled effect.
  4. Pour the cheesecake filling into the prepared crust, spreading evenly. Chill in the refrigerator for at least 6 hours or overnight.
  5. Once set, spread the remaining strawberry reduction on top of the cheesecake. Garnish with whipped cream and fresh strawberry slices (optional). Serve chilled.
