Instructions

  1. Combine graham cracker crumbs, salt, brown sugar, and melted butter in a bowl. Press the mixture firmly into the bottom of a 9×13 inch baking pan. Chill in the refrigerator.
  2. In a large mixing bowl, beat cream cheese with granulated sugar and vanilla extract until smooth and creamy. Whip the heavy whipping cream in a separate bowl to medium peaks and fold it into the cream cheese mixture. Spread evenly over the chilled crust and refrigerate.
  3. For the topping, mix water and cornstarch. In a saucepan, combine strawberries, cornstarch mixture, and sugar, cooking over medium heat until boiling. Simmer for 10 minutes, then stir in lemon juice and remove from heat. Let it cool slightly.
  4. Place the strawberry topping on the cheesecake layer, discarding any excess liquid from the saucepan. Refrigerate for 6-8 hours or overnight until fully set.
  5. Once set, lift the cheesecake from the pan using parchment paper. Slice into bars and serve chilled.
