Description
No-Bake Lemon Icebox Pie is a refreshing, easy-to-make dessert with a creamy lemon filling and buttery graham cracker crust, perfect for summer.
Ingredients
Scale
- 1 1/2 cups graham cracker crumbs (about 10 full sheets)
- 1/3 cup granulated sugar
- 1/2 cup unsalted butter (melted)
- 1 can (14 ounces) sweetened condensed milk
- 1/2 cup freshly squeezed lemon juice (about 2–3 lemons)
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream (chilled, for topping)
- Additional lemon zest or mint leaves (for garnish, optional)
Instructions
- Prepare the graham cracker crust by combining graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch pie pan and chill.
- In a large mixing bowl, combine sweetened condensed milk, lemon juice, lemon zest, and vanilla extract. Whisk until smooth and creamy.
- Whip the heavy cream in a separate bowl until soft peaks form.
- Gently fold the whipped cream into the lemon mixture. Pour into the chilled graham cracker crust and smooth the top.
- Refrigerate the pie for at least 4 hours, preferably overnight, to allow it to set.
- Before serving, garnish with additional lemon zest or mint leaves, if desired. Slice and serve chilled.
Notes
- For a dairy-free option, use coconut cream and dairy-free sweetened condensed milk.
- Ensure the pie has enough time to set in the refrigerator for the best texture.
- If you prefer a stronger lemon flavor, adjust the lemon juice or zest to your taste.
- For a gluten-free version, use gluten-free graham crackers or crushed nuts for the crust.
