- 15 pitted Medjool dates (about 230g), soaked in warm water for 10 minutes
- 3/4 cup (100g) unsalted cashews
- 3/4 cup (100g) unsalted almonds
- 1 cup (250g) Greek yogurt (plain or any flavor)
- Assorted sliced fresh fruit (e.g., strawberries, blueberries, kiwi)
- Optional for topping: 2 tablespoons apricot preserves mixed with 1 tablespoon water
Instructions
- Prepare the Tart Pan: Spray the bottom of a 9-inch tart pan with nonstick cooking spray and line with parchment paper.
- Soak and Prepare Dates: Soak the Medjool dates in warm water for 10 minutes, then drain and set aside.
- Make the Nut Crust: In a food processor, combine soaked dates, cashews, and almonds. Pulse until a thick dough forms. Press evenly into the tart pan.
- Add the Greek Yogurt Layer: Spoon Greek yogurt over the crust and spread evenly. Decorate with sliced fruits.
- Optional Glaze: Mix apricot preserves and water to create a glaze, then brush over the fruit topping.
- Chill and Serve: Refrigerate until ready to serve, best enjoyed fresh.
