Instructions

  1. In a bowl, mix graham cracker crumbs and melted butter.
  2. Press mixture into the bottom of a springform pan.
  3. In another bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
  4. In a separate bowl, whip heavy cream until stiff peaks form.
  5. Fold whipped cream into cream cheese mixture.
  6. Spread cream cheese mixture over the crust in the pan.
  7. In a small saucepan, combine blueberries and lemon juice, and cook until slightly thickened.
  8. Pour blueberry mixture over the cheesecake layer.
  9. Refrigerate for at least 4 hours before serving.
