A simple and delicious no bake blueberry cheesecake.
Ingredients

- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 cups fresh blueberries
- 1 tablespoon lemon juice
Instructions
- In a bowl, mix graham cracker crumbs and melted butter.
- Press mixture into the bottom of a springform pan.
- In another bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
- In a separate bowl, whip heavy cream until stiff peaks form.
- Fold whipped cream into cream cheese mixture.
- Spread cream cheese mixture over the crust in the pan.
- In a small saucepan, combine blueberries and lemon juice, and cook until slightly thickened.
- Pour blueberry mixture over the cheesecake layer.
- Refrigerate for at least 4 hours before serving.
Notes
- Use fresh blueberries for best flavor.
- Let the cheesecake chill overnight for a firmer texture.
- Top with additional blueberries before serving if desired.
