- 1 cup heavy cream
- 1 cup powdered sugar, divided
- 2 (8-oz) blocks cream cheese, softened
- 1/4 cup Greek yogurt (preferably full fat)
- 1 tsp pure vanilla extract
- Juice of 1 lime
- Pinch of kosher salt
Instructions
- In a saucepan, combine blackberries, 1/4 cup granulated sugar, and lime juice. Simmer over medium heat for 8 minutes, breaking down the berries. Strain through a fine mesh sieve and let cool.
- Crush graham crackers in a food processor. Mix crumbs with 1/4 cup granulated sugar and melted butter until the texture resembles wet sand. Press into an 8×8-inch baking dish and set aside.
- In a mixing bowl, beat heavy cream and 1/4 cup powdered sugar until stiff peaks form. Set aside.
- In the same bowl, beat cream cheese with remaining 3/4 cup powdered sugar until smooth. Add Greek yogurt, vanilla, lime juice, and salt. Mix until well combined.
- Stir a small portion of whipped cream into the cream cheese mixture to lighten it, then gently fold in the rest.
- Spread the cheesecake filling evenly over the crust. Drop spoonfuls of the cooled blackberry sauce on top and swirl using a toothpick or skewer.
- Cover and refrigerate for at least 4 hours or overnight until set. Cut into squares before serving.
