  • 1/4 cup granulated sugar (for topping)
  • Juice of 1/2 lime
  • 1 sleeve graham crackers (about 1 1/4 cups crushed)
  • 5 Tbsp unsalted butter, melted
  • 1/4 cup granulated sugar (for crust)
  • 1 cup heavy cream
  • 1 cup powdered sugar, divided
  • 2 (8-oz) blocks cream cheese, softened
  • 1/4 cup Greek yogurt (preferably full fat)
  • 1 tsp pure vanilla extract
  • Juice of 1 lime
  • Pinch of kosher salt

Instructions

  1. In a saucepan, combine blackberries, 1/4 cup granulated sugar, and lime juice. Simmer over medium heat for 8 minutes, breaking down the berries. Strain through a fine mesh sieve and let cool.
  2. Crush graham crackers in a food processor. Mix crumbs with 1/4 cup granulated sugar and melted butter until the texture resembles wet sand. Press into an 8×8-inch baking dish and set aside.
  3. In a mixing bowl, beat heavy cream and 1/4 cup powdered sugar until stiff peaks form. Set aside.
  4. In the same bowl, beat cream cheese with remaining 3/4 cup powdered sugar until smooth. Add Greek yogurt, vanilla, lime juice, and salt. Mix until well combined.
  5. Stir a small portion of whipped cream into the cream cheese mixture to lighten it, then gently fold in the rest.
  6. Spread the cheesecake filling evenly over the crust. Drop spoonfuls of the cooled blackberry sauce on top and swirl using a toothpick or skewer.
  7. Cover and refrigerate for at least 4 hours or overnight until set. Cut into squares before serving.
