- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup powdered sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1 large egg yolk
- 2 tablespoons cold water
- 1 cup heavy cream
- 8 ounces dark chocolate (70% cocoa), chopped
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- Cocoa powder (for dusting)
- Edible flowers (for garnish)
Instructions
- Prepare the tart crust by mixing flour, cocoa powder, powdered sugar, and salt. Blend in cold butter until crumbly.
- Create a well in the mixture, add egg yolk and cold water, and mix until dough forms.
- Heat heavy cream in a saucepan until simmering, then remove from heat and add chocolate, sugar, and vanilla. Stir until smooth.
- Pour the chocolate ganache into cooled tart shells and let set at room temperature for 30 minutes.
- Preheat oven to 350°F (175°C) and bake tart shells for 15-20 minutes until firm. Cool completely before adding ganache.
- Dust with cocoa powder and garnish with edible flowers before serving.
Notes
- Store in an airtight container in the refrigerator.
- Allow tarts to sit at room temperature for 15-20 minutes before serving for best flavor.
- Can be frozen for up to a month; thaw in the refrigerator overnight.
