Ingredients

  • 1 ¾ cups all-purpose flour
  • ½ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, melted and slightly cooled
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¾ cup milk
  • 1 ½ cups fresh or frozen blueberries

Instructions

  1. Preheat oven to 375°F (190°C) and prepare a muffin pan by lining it with paper liners or greasing the cups.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Whisk together until evenly mixed.
  3. In another bowl, whisk together the melted butter, egg, vanilla extract, and milk.
  4. Pour the wet ingredients into the dry ingredients, and gently stir until just combined. Add blueberries and fold them in gently.
  5. Fill each muffin cup about ¾ full with batter. Bake for 18-22 minutes, or until a toothpick comes out clean and tops are golden.
  6. Cool the muffins for 5 minutes in the pan before transferring them to a wire rack. Serve warm or at room temperature.
