- 2 ½ cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 cup cold unsalted butter, cut into small pieces
- 6–8 tablespoons ice water
- 6 cups sliced apples (Granny Smith and Honeycrisp are great options)
- ¾ cup sugar
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- 1 tablespoon lemon juice
- 2 tablespoons cornstarch
- 1 tablespoon unsalted butter (to dot)
Instructions
- Combine flour, salt, and sugar for the crust, then work in butter until the mixture resembles coarse crumbs.
- Gradually add ice water until dough holds together. Divide into two discs, wrap, and refrigerate for at least an hour.
- Prepare the filling by combining sliced apples, sugar, cinnamon, nutmeg, lemon juice, and cornstarch.
- Roll out one disc of dough and fit it into a 9-inch pie pan. Add the apple filling and dot with butter.
- Roll out the second disc, place it over the pie, and crimp the edges. Brush with an egg wash.
- Bake at 425°F (220°C) for 15 minutes, then reduce heat to 350°F (175°C) and bake for an additional 35-45 minutes.
- Let the pie cool for at least an hour before slicing and serving.
Notes
- For a deeper sweetness, replace granulated sugar with brown sugar.
- Mix apple varieties for a more complex flavor profile.
- Use flour instead of cornstarch for thickening the filling if preferred.
- If you prefer a dairy-free version, substitute coconut oil for butter in the crust.
