Description
Moscato Cheesecake Bites are rich, creamy mini cheesecakes with a crunchy crust, flavored with strawberries and sweet Moscato wine.

- 1 1/4 cups Nilla Wafer crumbs
- 1/4 cup butter, melted
- 2 (8-ounce) blocks cream cheese, softened
- 1/2 cup sugar
- 1/4 cup pureed strawberries
- 1/4 cup rosé Moscato
- 2 Tbsp heavy cream
- 1 Tbsp cornstarch
- 2 large eggs
- Sliced strawberries for garnish
- Whipped cream for garnish
- Pink sprinkles (optional)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
- Mix Nilla Wafer crumbs and melted butter. Press into the pan to form a crust. Set aside.
- In a large bowl, beat cream cheese and sugar until fluffy (about 2 minutes).
- Add pureed strawberries, rosé Moscato, heavy cream, and cornstarch. Mix until just combined.
- Add eggs one at a time, beating after each until fully incorporated.
- Pour cheesecake mixture over crust and spread evenly.
- Bake for 25–30 minutes or until center is slightly jiggly. Turn off oven, prop door open, and cool for 1 hour.
- Refrigerate for 3–4 hours until fully set.
- Remove from pan, slice into squares, and garnish with whipped cream, strawberries, and optional sprinkles.
Notes
- Do not overmix the batter to avoid cracks.
- Ensure cream cheese is fully softened for a smooth texture.
- Cool gradually in the oven to prevent sudden temperature changes.
- Can be made ahead and refrigerated overnight.
