Description

Moscato Cheesecake Bites are rich, creamy mini cheesecakes with a crunchy crust, flavored with strawberries and sweet Moscato wine.


Ingredients

  • 1 1/4 cups Nilla Wafer crumbs
  • 1/4 cup butter, melted
  • 2 (8-ounce) blocks cream cheese, softened
  • 1/2 cup sugar
  • 1/4 cup pureed strawberries
  • 1/4 cup rosé Moscato
  • 2 Tbsp heavy cream
  • 1 Tbsp cornstarch
  • 2 large eggs
  • Sliced strawberries for garnish
  • Whipped cream for garnish
  • Pink sprinkles (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
  2. Mix Nilla Wafer crumbs and melted butter. Press into the pan to form a crust. Set aside.
  3. In a large bowl, beat cream cheese and sugar until fluffy (about 2 minutes).
  4. Add pureed strawberries, rosé Moscato, heavy cream, and cornstarch. Mix until just combined.
  5. Add eggs one at a time, beating after each until fully incorporated.
  6. Pour cheesecake mixture over crust and spread evenly.
  7. Bake for 25–30 minutes or until center is slightly jiggly. Turn off oven, prop door open, and cool for 1 hour.
  8. Refrigerate for 3–4 hours until fully set.
  9. Remove from pan, slice into squares, and garnish with whipped cream, strawberries, and optional sprinkles.

  • Ensure cream cheese is fully softened for a smooth texture.
  • Cool gradually in the oven to prevent sudden temperature changes.
