Instructions
- Preheat oven to 350°F (175°C). Line or grease a muffin tin.
- In a large bowl, whisk together all-purpose flour, whole wheat flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, mix grated carrot, grated apple, crushed pineapple, shredded coconut, and chopped nuts.
- Gently fold the fruit and nut mixture into the dry ingredients.
- In a separate bowl, whisk eggs, vegetable oil, and vanilla extract until combined.
- Pour the wet ingredients into the dry ingredients and fold until just combined; avoid overmixing.
- Fill muffin cups about 3/4 full with batter.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Cool muffins in the pan for 5 minutes, then transfer to a wire rack to cool completely.
