Description

  • 3 large eggs
  • 1/2 cup vegetable oil or melted coconut oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line or grease a muffin tin.
  2. In a large bowl, whisk together all-purpose flour, whole wheat flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix grated carrot, grated apple, crushed pineapple, shredded coconut, and chopped nuts.
  4. Gently fold the fruit and nut mixture into the dry ingredients.
  5. In a separate bowl, whisk eggs, vegetable oil, and vanilla extract until combined.
  6. Pour the wet ingredients into the dry ingredients and fold until just combined; avoid overmixing.
  7. Fill muffin cups about 3/4 full with batter.
  8. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool muffins in the pan for 5 minutes, then transfer to a wire rack to cool completely.
