Instructions
- Prepare the base by melting dark chocolate and unsalted butter together in a double boiler until smooth.
- In a separate bowl, whisk egg yolks with granulated sugar and vanilla extract until pale and creamy, then combine with the cooled chocolate mixture.
- Beat egg whites until stiff peaks form and gently fold into the chocolate mixture in three additions.
- Whip heavy cream with powdered sugar until soft peaks form and fold into the chocolate mixture until no white streaks remain.
- Spoon or pipe the mousse into clear glass cups and chill for at least 2 hours until set.
