Ingredients

  • 3/4 cup (180ml) boiling water
  • 1 tsp baking soda
  • 1/2 cup (120ml) molasses
  • 1/2 cup (113g) unsalted butter, softened
  • 3/4 cup (150g) brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/4 cups (160g) all-purpose flour
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1 tsp baking powder
  • 1/4 tsp salt

For the Blood Orange Glaze:

  • 1/2 cup (120ml) blood orange juice, fresh
  • 1 cup (120g) powdered sugar
  • Zest of 1 blood orange

Instructions

  1. Chop the pitted dates and soak them in boiling water with baking soda for 10 minutes.
  2. In a separate bowl, whisk together the dry ingredients: flour, cinnamon, ginger, cloves, nutmeg, baking powder, and salt.
  3. Cream together the butter and brown sugar until light and fluffy, then add molasses and vanilla extract, mixing well.
  4. Beat in the eggs one at a time until fully incorporated.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined, then fold in the soaked dates and their liquid.
  6. Preheat the oven to 350°F (175°C) and pour the batter into a prepared 8-inch round cake pan. Bake for 40 to 45 minutes.
  7. While the cake is baking, prepare the blood orange glaze by whisking together the juice, powdered sugar, and zest until smooth.
  8. Once the cake is baked, cool it for 10 minutes in the pan, then remove it and drizzle the glaze over the warm cake.
