- 3/4 cup (180ml) boiling water
- 1 tsp baking soda
- 1/2 cup (120ml) molasses
- 1/2 cup (113g) unsalted butter, softened
- 3/4 cup (150g) brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/4 cups (160g) all-purpose flour
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground cloves
- 1/4 tsp ground nutmeg
- 1 tsp baking powder
- 1/4 tsp salt
For the Blood Orange Glaze:
- 1/2 cup (120ml) blood orange juice, fresh
- 1 cup (120g) powdered sugar
- Zest of 1 blood orange
Instructions
- Chop the pitted dates and soak them in boiling water with baking soda for 10 minutes.
- In a separate bowl, whisk together the dry ingredients: flour, cinnamon, ginger, cloves, nutmeg, baking powder, and salt.
- Cream together the butter and brown sugar until light and fluffy, then add molasses and vanilla extract, mixing well.
- Beat in the eggs one at a time until fully incorporated.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined, then fold in the soaked dates and their liquid.
- Preheat the oven to 350°F (175°C) and pour the batter into a prepared 8-inch round cake pan. Bake for 40 to 45 minutes.
- While the cake is baking, prepare the blood orange glaze by whisking together the juice, powdered sugar, and zest until smooth.
- Once the cake is baked, cool it for 10 minutes in the pan, then remove it and drizzle the glaze over the warm cake.
