  • 2 tbsp molasses (blackstrap or dark)
  • 1 tsp baking soda
  • 250ml (1 cup) boiling water
  • 100g (½ cup) unsalted butter, softened
  • 150g (¾ cup) brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp fresh grated ginger
  • 200g (1 ½ cups) all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp salt
  • 120ml (½ cup) freshly squeezed orange juice
  • 75g (⅓ cup) caster sugar
  • 1 tsp grated orange zest
  • 1 tbsp lemon juice

Instructions

  1. Prepare the ingredients by chopping the dates and measuring out the molasses, baking soda, and boiling water.
  2. Sift together the all-purpose flour, baking powder, ground cinnamon, ground nutmeg, and salt in a separate bowl.
  3. Cream the softened butter and brown sugar together until light and fluffy, then add the eggs one at a time, mixing well after each addition. Stir in the molasses, vanilla extract, and grated ginger.
  4. Combine the soaked dates with the wet mixture, then gently fold in the dry ingredients until just combined.
  5. Preheat the oven to 180°C (350°F) and grease your baking dish. Pour the batter into the dish and bake for 40 to 45 minutes.
  6. While the pudding is baking, prepare the zesty syrup by combining orange juice, caster sugar, orange zest, and lemon juice in a saucepan and simmering until slightly thickened.
  7. Once the pudding is baked, pour the warm zesty syrup over it and serve.
